PUMPKIN ROLL  

3 eggs
1 c. sugar
2/3 c. pumpkin
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. salt
Chopped nuts

 

FILLING:

 

1 c. powdered sugar
6 oz. cream cheese
4 tbsp. butter
3/4 tsp. vanilla
1/4 tsp. salt

DIRECTIONS

Beat eggs at high speed, 5 minutes. Gradually beat in sugar. Stir in pumpkin. Sift flour, baking powder, spices and salt. Stir into first ingredients. Spread into greased and floured pan, 15 x 10 inch. Sprinkle with chopped nuts. Bake at 375 degrees for 15 minutes.

Place on towel sprinkled with powdered sugar. Start at narrow end and roll with towel and cake together. Let it cool; unroll and spread with filling.

Filling: Mix powdered sugar, cream cheese, butter, vanilla and salt. Beat until smooth. Spread over cake and roll.
